Minty Start

Hello my beloveds.

Well, more than just hi, I should say…

It has been how many years? I believe 3 isn’t it?

My, how the time flies. I can’t believe I am sitting here typing out words to a blog I started exactly 3 years ago this day. (yes, it’s our anniversary hu hu hu)

I honestly have to say though, I don’t even know why I decided to log into my blog today of all days. Coincidence I believe, but the fact that today was in fact a special day made me a little bit nostalgic.

I spent a good amount of time going over our previous blog posts, some of our favorites, and some of yours too.

It was depressing a little seeing how horrible I was with writing (not that I am any better now but I mean I should be right…?)
ehhhhhhh soooo what I wanted to say was…

5/22 Quote of the Day

“I’m pretty sure that eating chocolate keeps wrinkles away because I have never seen a 10 year old with a Hershey bar and crows feet.”

― Amy Neftzger

I love her logic when it comes to eating chocolate. 🙂 I almost wished I could believe it, but it’s actually true! Chocolate, for some odd reason, actually does keep those wrinkles away! Just a little bit a day will keep you looking healthy and young. 🙂 Here’s a link to learn more!

Chocolate Budino with Mint Whipped Cream

Chocolate Budino with Mint Whipped Cream

Makes 4 (4 ounce) servings

start to finish: 2 hrs 55 min with chilling time

Chocolate Budino

4½ ounces dark chocolate, roughly chopped

4½ ounces milk chocolate, roughly chopped

2¼ cups whole or 2% milk

¼ cup cornstarch

2 egg yolks

2 teaspoons granulated sugar

3½ tablespoons unsalted butter, cut into ½-inch pieces

Kosher salt

Mint Whipped Cream

¼ cup heavy cream

1 tablespoon confectioners’ sugar

1-2 tablespoons finely chopped mint leaves

1. Make the budino: In a metal bowl set over a saucepan filled with 2 inches of simmering water, combine the dark chocolate with the milk chocolate and heat, stirring frequently, until melted, about 5 minutes. Remove the chocolate from the heat and cover to keep warm. Set aside.

2. In a small bowl, whisk ½ cup of the milk with the cornstarch until combined. In a large saucepan set over medium-low heat, combine the milk-cornstarch mixture with the remaining 1¾ cups milk and slowly bring the mixture to a boil, whisking often. (The mixture will thicken slightly as it heats.)

3. Meanwhile, in a metal bowl set over a saucepan filled with 2 inches of simmering water, combine the eggs with the granulated sugar, whisking frequently until thick and pale. Gradually whisk ¼ cup of the hot milk mixture into the egg yolks to temper the yolks. Remove the bowl from the heat and whisk in the remaining milk mixture and the melted chocolate until just combined. Whisk in the butter until melted, then season to taste with salt.

4. Strain the mixture through a fine-mesh strainer and divide among four 4-ounce ramekins. Cool slightly, then cover and refrigerate until well chilled and set, about 2 hours.

5. Just before serving, make the mint whipped cream: In a medium bowl, whisk the heavy cream with the confectioners’ sugar until soft peaks form. Add the mint leaves to the cream to taste and continue whisking until firm peaks form. Top each budino with a dollop of the whipped cream and serve immediately.

Milk Chocolate Romeo and Marshmallow Juliet

You guys have all heard about the “power of love” right?

Love is so strong that nothing can break the bonds that connect the two lovers

Meh. Well for us people, we love food.

“Juliet turned towards the direction of her love. ‘I can’t leave you! Yes, I have all the AP test and Finals and SATs and Job Applications, and my parents won’t allow me to be with you, but what can I do?’ She let out a big sigh and wiped her tears. She took her lover towards her heart and kissed it with the kisses so lovable, so soft, so as not to break the fragile face of the lover. ‘Please, don’t send me away. I love you! I will forever be with you!’ Juliet sniffled and took a small bite out of the luscious, velvet-like textured dark chocolate.

When you’re depressed or tired of life, don’t you crave food? I do. Food is one thing that you can’t live without, and it sure makes us food lovers radiate with happiness~ How do you know if you’re a food lover? Well think with me. Have you ever gotten a ring pop and pretended it was a 6 carat diamond ring? Are you the kind of person who gives homemade goods to friends for their birthday or just because? Is the only time in school that you enjoy most is baking or cooking class or lunch? Do you always hang out at cafes and restaurants when you meet up with friends? Do you always fantasize about an amazing date with your lover at a fancy restaurant, swirling wine as you eat steak and watch the scenery of the sea? Are you picky about the looks and taste of the food? Do you love the look of raw meat with nice marbling? If so, then you’re definitely a food lover. It’s not about if you eat a lot or very little. In fact, some of the more picky food lovers are considered food haters because of their picky-ness of food. They just like specific kinds of food, mostly organic with no preservatives and chemicals.

Anyways, where was I? So. The power of love, nah,  the power of food. Food, keeps us strengthened, keep us happy, keep us alive. It’s the one thing we can’t live without. (I repeat. Well…besides water, but I still count that as food…) When I was down because of stress and lack of sleep, my friend handed me a piece of chocolate. Of course, she didn’t know that I was depressed or anything, she just had a bar and handed a piece to me. But that really made my day. The sweet chocolate melting in my mouth, just made me feel better. Before that, I had written on a slip of paper “When you’re down, all you need is a good ol’ lollipop”, rolled it up and tied it up with a ribbon, and threw it in a random teacher’s mailbox (I still don’t know who I gave it to) with a really sweet Korean lollipop.

Just thinking of what that teacher might have thought when he/she received it made me feel all warm inside. 🙂 Exactly the same feeling when you take a bite of the still hot lobster tail. *U*
